Potato Refrigerated Rolls

1 1/2 cups warm water
2/3 cups sugar
2/3 cups shortening
1 pkg. dry yeast
1 1/2 tsp. salt
2 eggs
1 cup lukewarm mashed potatoes
7 - 7 1/2 cups flour

In bowl dissolve yeast in water. 
Stir in sugar, salt, shortening, eggs and potatoes.
Mix in flour until easy to handle.
Turn onto lightly floured board. 
Knead until smooth and elastic.
Place dough in greased bowl and turn until you have greased side up.
Cover with damp cloth.
Put in refrigerator overnight.
Approx. 2 hours before baking, shape dough into balls and place in greased baking pans.
Let rise in draft free area for 1 1/2 hours or until double in size.
Bake in a 400 degree over for 15 minutes or until done.

Makes approx 4 dozen rolls.
