Apple Nut Coffee Cake

1/4 cup shortening
1/2 cup sugar
1 egg
1/2 tsp. vanilla
1 cup flour
1 tsp. baking powder
1/4 tsp. baking soda
1/8 tsp. salt
1/2 cup sour cream
3/4 cup chopped apple
1/4 cup chopped pecans

Topping:
1 tbsp. melted butter
1/2 tsp cinnamon
1/4 cup brown sugar


Combine dry ingredients, set aside.
Cream shortening and sugar.
Add egg and vanilla.
Stir dry ingredients to the cream mixture alternating with sour cream.
Add chopped apple and nuts.
Pour into a greased and floured 8x8" baking pan.
Sprinkle with topping.
Bake in a 350 degree oven for 25-30 minutes.


I double this recipe most of the time and bake in a 13x9" pan.
Baking time may need to be increased when you double recipe.
